Easy No Flour Chocolate Torta

We all love a little chocolate from time to time. 

You can use white chocolate, semi-sweet chocolate, or milk chocolate for this recipe so whichever you like you can adapt this to your family's favorite and surprise them.




What's a Torta? 

It's Italian for tart, pie or cake. This recipe is very rich. You just need a small slice to satisfy your chocolate craving. 

We made our Torta with Semi-Sweet Chocolate chips but you can use white chocolate or milk chocolate. All you need to do is to adjust the sugar to taste. Remember dark chocolate isn't very sweet so we used more sweetener than we would with white chocolate which has a lot of sugar already. 

Prep: 

Preheat the oven to 350° 

Assemble Springform pan

Put eggs and butter out for a bit till they reach room temperature

For Springform Pan: 

You can use a 6" or 8" springform pan. We used an 8" pan. Remove bottom of springform pan. Butter bottom of springform pan with cool butter from the refrigerator.  Place parchment over the base of the springform pan. Secure base in pan. Butter top of parchment and sides of springform pan. Set aside. 

Ingredients: 

Butter for the pan (refrigerated) 

4 oz (1/2 stick) butter softened 

6 large eggs at room temperature

1-1/2 tsp Stevia or sweetener

1 tsp vanilla 

1 lb (16 oz) chocolate (semi-sweet chocolate, milk chocolate or white chocolate) Make sure chocolate is in chip form or chopped

Optional Toppings:

Strawberries, Blueberries, caramel sauce, chocolate sauce, nuts. Vanilla ice cream. Anything you like! 

Directions:

  • Place the softened butter in a mixing bowl and beat on high speed with an electric mixer until light and fluffy. 
  • Add the eggs one at a time and continue beating until combined. The mixture will not be smooth at this stage.

  • Add the sweetener and vanilla. Beat for another 30 seconds. 
  • In a microwave-safe glass bowl place chocolate chips and microwave for 2-3 minutes (time varies by microwave). Begin with 1 minute and check then heat in 30-second intervals till melted and smooth. Be careful not to over microwave. You can also use a double broiler on low heat string constantly until smooth. 

  • Slowly mix the chocolate into the egg mixture, string consistently until a thick batter forms. 
  • Pour batter into the prepared pan and bake for 25 minutes.
  • Cool to room temperature and refrigerate for at least 3 hours or overnight. 
  • You can eat it straight or add anything you like with it. It's very rich so adding berries to a small slice is a great option.
