Corn bread with chili. It's a classic.
This recipe is one of our favorites because it's a great compliment to chili but can be a stand alone snack for after school too. The best part is that it's easy enough the kids can help make it.
Korny Cornbread
1 8.5 oz ready made corn muffin mix
1 Egg
1/3 Cup Milk
1/4 Cup Finely Diced Roasted Pepper
1/4 Cup Finely Diced Red Pepper
1 Cup Whole Kernel Corn
Top with butter, or cheese if you desire
Mix together Corn muffin mix, egg, and milk. Add roasted pepper, red pepper, and Corn. Pour into pan (8x8, 7x10 or similar - you can make muffins too!). Bake at 400F for 15-20 minutes until golden brown or till toothpick comes out clean. Top with butter, or cheddar cheese if you desire.
Half the fun is being creative with what you top your chili and cornbread with.
Serve with your favorite chili or on it's own.
