Overnight Slow-Cooker Egg Bake
Deliciously cheesy and loaded with flavor, this slow cooker strata egg bake is the perfect thing to wake up to in the morning!
Ingredients

10 large eggs

2 ½ cups whole milk

1 teaspoon salt

¼ teaspoon freshly ground black pepper

14 slices French bread, about 1/2 inch thick, cut into cubes (optional)

8 Slices cooked bacon, crumbled, or 8 breakfast sausage links, sliced (or both!)

1 medium red bell pepper, diced

4 green onions, sliced

3 cups shredded Cheddar cheese
(You can add seasonings you like from cumin & chili power to sage & lemon be creative and use the flavorings your family likes maybe Italian etc)
Steps
Gather your ingredients.
Lightly spray the bottom of the slow cooker with vegetable oil. Take three pieces of aluminum foil, each one about 3-4 inches larger than the diameter of your slow cooker. Fold two into thirds and place them crisscross on the bottom of your slow cooker and partly up the sides. This is going to provide reinforcement when you lift out the finished egg bake.

Place the third sheet on top and partly up the sides.

In a large mixing bowl, whisk together the eggs, milk, salt and pepper until thoroughly combined.
Place half of the bread cubes in the bottom of the slow cooker.
Add 1/2 of the following in order: The bacon or sausage, red bell pepper, green onions, and cheese. Repeat with the other half of the ingredients.

Pour the egg mixture over the top. Close the lid and cook on LOW for 4-6 hours or until the strata is firm in the center when touched.

Lift it out of the slow cooker and serve immediately.

Really the basics of this recipe is just to add what your family will eat and enjoy. You can season it as you like. Just keep the Egg and cheese ratio the same and don't add to many "juicy" items like tomatoes celery etc. When you cook these items it adds moisture and you will end up with runny eggs or a lot of water in the bottom of the cooker.  Adding things like potatoes & carrots will work too as you cook this overnight and it will make them tender.
