Breakfast in a Pinch. An Easy and Delicious Breakfast on The Run.

Ok, Who wants an easy breakfast that you can make ahead and just pull out and microwave in seconds so you can race out the door? 

This great breakfast can be enjoyed at home or on the run. We use these anytime we know we have a limited time in the morning. You can prep them in the pan overnight pop them in the oven and bake or you can bake them up in the evening and reheat them in the morning. 

Easy Egg Cups

Ingredients: 

12 slices - Thin sliced ham 

12 eggs 

Optional toppings: 

Cheese

Salsa

Salt/Pepper

Syrup

Anything your imagination can come up with

Directions:

Simply use any type of regular sized muffin/cupcake pans and line each cup with ham making sure to leave a bit hanging over the edge and the ham should touch the bottom and hug the inside of the cups. I use a packaged ham off the shelf but you can get thinly sliced ham from the deli too. 

Then crack an egg into the ham cup. If your kids don’t like the yolk you can remove it. 

Bake at 320 for 15-20 min depending on how hard you want the eggs cooked. If you are planning on reheating later bake them a bit less so they do not become too hard when you reheat them. 

Let them cool till they are just right to eat. 

Refrigerate any left over.

To reheat simply put them on a microwave safe plate, place them in the microwave for 10 to 15 seconds depending on your microwave. Make sure you put a small slit in the center of the egg yolk and cover with a paper towel or wax paper.
